Day 10- Gingersnaps
If you couldn't tell already, today we made Gingersnaps! ;) Gingersnaps are kinda like a soft Gingerbread cookie. I'm not a big fan of Gingerbread cookies, but these Gingersnaps were pretty good!
Just to let you know, I cut the recipe in half which makes exactly 2 dozens.
Gingersnaps
1 cup sugar
3/4 cups vegetable oil
1 egg
1/2 cup molasses
2 cups flour
2 tsp. baking soda
1/2 tbls. ground ginger
1 tsp. ground cinnamon
1/2 tsp. salt
Additional sugar
1 pkg. vanilla baking chips
- In a mixing bowl, comine sugar and oil; mix well. Add eggs, one at a time, beating well after eacha addition. Stir in molasses. Combine dry ingredients; gradually add to creamed mixture and mix well.
- Shape into 3/4-in. balls and roll in sugar. Place 2 in. apart on ungreased baking sheets. Bake at 350 degrees for 10-12 minutes or until cookies spring back when touched lightly. Remove to wire racks to cool.
- Melt chips in a small plastic bag in microwave for 1 minute; taking out every 30 secs to stir/mush in the bag. Cut a tiny hole in the corner of the plastic bag and drizzle on the cookie. (The bag works as a piping bag)
- Let harden for about 10 minutes (at the least). You can also put them in the fridge to harden faster. Enjoy!
